Oven Roasted Potatoes Hasselbacken

I read a lot of cooking literature.  As a caterer in Northern Virginia and Washington DC I am constantly on the lookout for a new recipe. Will this work for a wedding reception?  Can I cater with this or would it be better for personal consumption only? Flipping though a recent edition of Food And Wine I was captivated by this recipe. “Oven Baked Potatoes Hasselbacken” is a dish named for the placed where it was invented during the 1950’s, a restaurant turned cooking school in Stockholm.  Not only are the sliced baked potatoes attractive, they’re also delicious:  crisp on the outside and tender within.  www.foodandwine.com

1 1/2 lbs. small white potatoes such as Yukon Golds, peeled
4 Tb unsalted butter
Kosher Salt
2 Tb plain dry breadcrumbs or Panko crumbs

1.  Preheat the oven to 425.  Using a sharp pairing knife, slice each potato crosswise at 1/4″ intervals, cutting straight down but not all the way through the potato.  Transfer the potatoes to a large baking sheet or cast iron skillet
2.  Spoon the melted butter over the potatoes.  Season with S and P and roast for about 40 minutes, basting occasionally until tender.  Sprinkle the breadcrumbs over the potatoes and roast for 10 more minutes until golden and crisp.  serve hot.

Oven roasted Broccoli 

  I have blogged before about the wonders of roasting vegetables.  It is the perfect solution for escaping the dregs of winter weather.  The only requirement is a hot hot oven.  My personal favorite way is to roast small florets lightly tossed in vegetable or olive oil for approx 15 minutes.  Remove from oven and add 1-2Tb Hot Vietnamese Chili Sauce with another 1 TB oil.  Roast additional 10 minutes until browned and crisp.  Believe me, once you discover this cooking method,  you will want to experiment with any number of vegetables.
