Sometimes people want to eat lighter, healthier, or just want alternatives to a meat filled menu. Catering the Washington DC and Northern Virginia community provides us with ample opportunities for vegetarian cuisine.  On a warm summer afternoon, a perfect menu idea is our Bow Tie Pasta Salad with Sun Dried Tomato, Feta Cheese, Fresh Dill and Blanched Snow Peas.  It’s pretty, it’s refreshing. Omit the Feta Cheese and it’s vegan.

 Gazpacho Shooters make a fun summertime passed appetizer, especially when the local Farmer’s Markets are brimming with local ripe tomatoes.  Here in the Northern Virginia area we are blessed with numerous markets open nearly every day of the week throughout Fairfax County VA.
In the colder months we offer shooters of Roasted Butternut Squash and Corn Soup, showcasing fall flavors.

 Speaking of fall flavors, an excellent vegetarian side dish is our Maple Roasted Root Vegetables featuring both Sweet and White Potatoes, Carrots, Butternut Squash, Purple Potatoes (!!), and Red Onion.  As I have written in earlier blogs, roasting vegetables is one the easiest and most delicious ways to discover the charms of cooking with vegetables.  While a salad is most likely what first pops into people’s minds regarding a vegetable side dish, roasting opens the door to endless possibilities…including one of our newest creations:

Assorted Domestic and Imported Cheeses and Crackers featuring Brie with topping of Cranberry-Raspberry-Walnut; Smoked Gouda; Colby Marble, Blueberry Goat Cheese, New York Cheddar.  For a wedding reception menu, you can never go wrong with a cheese display.  Kids love it, adults love it, it’s all good.

For a vegetarian Main Course, Penne in a Vodka Sauce is a hearty and delicious menu addition.  Other vegetarian options could also include Tri Colored Tortellini in an Alfredo Sauce; Linguine with Sun Dried Tomato-Cilantro-Parmesan Sauce; and Grilled Vegetable Lasagna.
