Teatime Delicacies Catering menu ideas

Starting this week of June 27th, 2011 Teatime’s “What’s New at Teatime” blog will feature a menu item in more detail.

Sugar Spiced Smoked Apple Wood Salmon Filet

Smoked with our own apple tree branches, this appetizer is first rubbed with a mixture of sugar, cumin, chili powder, salt, paprika, black pepper and a pinch of cinnamon. We then slow smoke the salmon side over apple wood shavings. It is served here on a pewter platter with Carr’s water crackers. It is a favorite among Teatime staff!
