Salmon appetizer for your next party!

Have you ever considered substituting fresh salmon into any of your recipes that call for crab meat?  This is an example of one of our takes on “Silver Dollar Crab Cakes with Roasted Red Bell Pepper Sauce” using salmon filet instead of crab meat.  You could do the same thing with fresh tuna as well.  We poach whole salmon side filets in stock-wine until just tender.  After cooling, we shred it into small pieces (above photo) and mix it lightly with fresh breadcrumbs, scallion, tarragon, Dijon mustard, egg and touch of mayo.  Lightly molded into silver dollar sized medallions and pan fried, this appetizer can be served with Roasted Red Bell Pepper Sauce and/or Pesto Mayonnaise.  Deslish!!  Or even better:  Devilish!!
