Anatomy of a Wedding Cake – How To Choose A Wedding Cake

So you want to pick out a wedding cake, yes?  You want it to be
beautiful and delicious, yes? Are you overwhelmed with how to select the
right one?  Yes?

Let’s Start With The Very Beginning:  The Cake
One of the first things to consider when selecting a wedding cake,
or ANY cake for that matter, is the flavor.  Each tier of cake consists
of two LAYERS of cake and a filling in between the two layers.  Above
photo are three individual layers of cake, our Chocolate Fudge Cake
(wicked good).  We give you an option of three fillings:  Cream
Cheese (above large layer), mocha, or raspberry (bottom left).  All of
our cakes are made with real butter, frosted with butter cream icing. 
We prefer not to use fondant as we do not like the taste of the
product.  All of our fillings use real fruit, not preserves.  Another
layer of cake is placed on top, then a base frosting is applied, cake is
wrapped in heavy plastic and frozen for several days.  The tiers are
easier to manipulate when they are partially frozen.  We take them out
of the freezer several days before the wedding to finish the decorating.

Besides our Chocolate Fudge, other popular flavors include Yellow
Butter with Strawberry Filling; Almond Butter with Raspberry Filling;
Lemon Butter with Raspberry Filling; Carrot Cake with Cream Cheese

Cream Cheese Filling; Praline Spice Cake with Pecan Filling.  These are

And How Would You Like That Decorated?
Teatime has many designs to choose from, but feel free to look
online and send us your ideas.  The brownie cake in the above photo: 
bride and groom really didn’t like “cake” but loved brownies, so I came
up with this design.  Many of our cakes are simply decorated, perhaps
only using a colored ribbon around the base, and some fresh flowers. 
This way you can incorporate your colors into the cake by simply
purchasing a spool of ribbon that is in your particular color palate.
